Fleur de Sel (Salt Flower) is a Celtic salt that naturally forms as a thin, delicate crust of intricate snowflake-like crystals on the surface of the marshes of France’s western seashores.

Unprocessed, it is traditionally harvested in small quantities and only by hand. Naturally rich in essential minerals such as calcium and magnesium, Fleur de Sel can be used in the same way a traditional salt would be or as a finishing salt to enhance flavor.

With a legacy spanning over 1,300 years, our Fleur de Sel is naturally produced and then hand-harvested by a community of 100 skilled salt producers on the northwestern coast of France.

Using traditional methods unchanged for centuries, tidal ocean water is channeled into coastal salt marshes. Sun and wind evaporate the water until Fleur de Sel crystals surface, enriched with trace minerals from the marshes. Each delicate flake is harvested and meticulously hand-sorted to ensure purity. Known as the “caviar of salt,” Fleur de Sel is rare, requiring premium land and a skilled workforce (“sauniers”) for its exclusive artisanal handling.

Due to its natural moisture content, Fleur de Sel has a bright, oceanic flavor that lingers, enhancing both the flavor and presentation of gourmet dishes by adding a distinctive crunch and visual appeal.
